Iceberg Wedge with Warm Bacon and Blue Cheese Dressing

- A deliciously light salad with lots of flavour as well. This bacon recipe is nice served on the side with a pice of grilled beef or chicken. |
Ingredients to make
1 1/2 cups mayonnaise
2 tablespoons fresh lemon juice
1 tablespoon coarsely ground black pepper
1 teaspoon hot pepper sauce
1 cup coarsely crumbled blue cheese
Buttermilk (optional)
1/2 pound thick-cut bacon, cut crosswise into 1-inch pieces
1 large head of iceberg lettuce, cut into 6 wedges, each with some core attached
1/2 red onion, very thinly sliced
Directions to make
Mix first 4 ingredients in medium bowl. Add blue cheese and stir until well blended. If too thick, thin with buttermilk by tablespoonfuls to desired consistency. (Can be made 1 day ahead. Cover and chill.)
Cook bacon in large skillet over medium heat until golden brown and beginning to crisp. Arrange lettuce on plates. Spoon dressing over. Using slotted spoon, transfer warm bacon from skillet onto salads, dividing equally. Garnish with red onion.

Ingredients to make Fix It Fast Turkey Bacon Salad
5 slices low-sodium bacon
2 cups sugar snap peas
1/2 cup light mayonnaise
1 Tbsp. Dijon-style mustard
1 Tbsp. cider vinegar
1 Tbsp. snipped fresh dill
1 small head romaine, coarsely chopped or torn
8 oz. smoked turkey breast, cut into bite-size strips
Directions to make Fix It Fast Turkey Bacon Salad
Line a 9-inch microwave-safe pie plate with paper toweling. Arrange bacon in layer on toweling. Cover with additional toweling. Cook on 100 percent power for 4 minutes or until crisp. Remove plate from microwave. Set bacon aside to cool. Meanwhile, cook peas, covered, in boiling salted water for 2 minutes or until crisp-tender; drain. Crumble one bacon slice; set aside. Break remaining into pieces.
In bowl combine mayonnaise, mustard, vinegar and dill. Stir in crumbled bacon. Arrange romaine on each plate. Add peas, turkey strips, and bacon pieces. Top with dressing.
Bacon-Wrapped Appetizer Recipe

Unique bacon makes everything tastes better. Have you ever tried bacon-wrapped dates? Me either. Then this simple bacon recipe is a must try.
Ingredients to Make Bacon-Wrapped Appetizer Recipe:
1 package (8 oz) nitrate-free bacon
1 pound dates (organic if possible)
1. Preheat the oven to 350 degrees.
2. Cut the bacon slices in half.
3. Pit the dates with your fingers or with a paring knife.
4. Wrap each date with a half a slice of bacon. Use toothpicks if necessary.
5. Set on a baking dish, ideally one with high sides, so the bacon grease doesn’t spill all over your oven when it melts.
6. Bake for 15-20 minutes, or until the bacon gets crispy.
7. Remove from oven and transfer the bacon-wrapped dates to a serving platter.
Traditional Beans and Franks with Bacon

This always reminds me of my grandmothers house. She would start this simple recipe in the morning, allowing the beans to soak all day (or night sometimes).
3 slices bacon, cut in 1-inch pieces
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 lb frankfurters, cut in 1-inch pieces
1 can (1 lb. 14 oz) pork and beans
1/2 cup ketchup
1/4 cup brown sugar
1 tbsp mustard
4-oz Cheddar cheese, sliced about 3/4-inch wide
In a ten inch skillet, cook bacon until crisp. Saute onion, pepper and franks in skillet with bacon until onion is transparent.
In a 3-quart casserole combine all ingredients except cheese. Bake at 350 degrees for 20 minutes. Arrange cheese slices on top in spoke design. Bake ten minutes longer.
Makes 6 to 8 servings.

1 md Onion finely chopped
1 sm Green bell pepper finely chopped
4 Egg separated
2 c Milk
1 ts Salt
6 To 8 drop bottled hot pepper sauce

2 1/4 c Sifted flour
1 1/2 ts Salt
3/4 c Shortening
5 tb Cold milk
5 Eggs

1 tb Flour
1 3/4 c Half and half Cream
1/8 ts Nutmeg
1/4 ts Caraway seeds
