1 Polish sausage,sliced thinly
6 sl Bacon,chopped
1 c Onions,chopped
1/4 c Flour
2 c Chicken stock
1 c Water
4 c Corn
2 c Potatoes,cubed
1/8 ts White pepper
Red pepper sauce
2 c Milk
2 tb Butter

Directions to make Sausage Corn Chowder with Bacon

Step 1:In a big saucepan, brown the sausage and bacon until bacon is crispy. Remove sausage and bacon with a slotted spoon, and drain on a paper towel. Discard most of the fat; leave enough to cook the onion. Saute onion in reserved fat until tender, about 5 minutes.
Step 2:Gradually stir in the flour. Add stock and water, stirring constantly. Add sausage, bacon, corn, potatoes and white pepper. Add red pepper sauce to taste. Heat to boiling. Reduce heat and simmer, covered, for 15 to 20 minutes. Stir occasionally.
Step 3:Add milk and cook until soup is heated through and potatoes are tender. Top with butter and serve.

Ingredients to make Veal Stew with Bacon

1/4 lb Bacon sliced, diced
2 lb Veal shoulder, boneless, in 1 inch cubes
2 tb Shallots or onions, minced
1 md Garlic clove, minced
3 tb Flour
2 c Veal stock or chickn broth
1 t Salt
1/8 ts Black pepper
2 c Red Burgundy wine, divided
1 1/2 ts Worcestershire Sauce
2 tb Butter
1/2 lb Mushrooms, small, fresh or 14 to 15 oz. can
1 cn Carrots, tiny, whole, draind
1 lb Onions, tiny, white; cooked

Directions to make Veal Stew with Bacon

Step 1:Saute bacon in large saucepot until crisp. Remove bacon leaving 2 tablespoons drippings in pot; set bacon aside. Heat drippings until hot.
Step 2:Add veal, a few pieces at a time; brown on all sides; remove and set aside. Add shallots and garlic; saute 2 minutes. Add flour; cook and stir 1 minutes. Return veal to pot. Stir in stock, salt, pepper, 1-1/2 cups wine and Worcestershire sauce. Bring to boiling point. Simmer, covered, until veal is tender. about 1-1/2 hours.
Step 3:In skillet melt butter; add mushrooms; saute 3 mintues; keep warm. Add carrots, onions, mushrooms, bacon, and remaining wime to stew during last 5 minutes of cooking. Spoon into serving casserole.

Ingredients to make Hearty Meat Stew

2 c Dried black beans*
3 c Water
1/2 lb Sausage, cut, 1 inch pieces
1/2 lb Beef, any cut, 1inch cubes
1/2 lb Pork, any cut, 1 inch cubes
3 sl Bacon cut in 1 inch pieces
1 Jalapeno or green chili pepper, seeded and finely chopped (handle w/ care!)
1 Tomato, finely chopped
3 cl Garlic, finely chopped or 1 t. garlic granules
Salt, pepper, and ground red - pepper to taste

Directions to make Hearty Meat Stew

Step 1:To reconstitute black beans, boil in 6 cups water for 2 min. Remove from heat, cover, and set aside 1 hr. Beans will double in size
Step 2:Put drained, soaked beans with water in large saucepan or Dutch oven and bring to boil over high heat. Reduce heat to simmer, cove, and cook for about 1-1/2 hours or until beans are tender; stir frequently
Step 3:Add sausage, beef, and pork, mix well, cover, and cook over medium heat for about 45 min. Stir frequently and add a little hot water if necessary to prevent sticking

Step 5:Add jalapeno, tomato, and garlic. Mix well. Reduce heat to simmer and cook for 2 minutes. Add bacon and vegetables to meat mixture and salt, pepper, and red pepper to taste. Mix well, remove from heat and serve
Step 6:Serve over rice and garnish with orange slices.

Ingredients to make Apple-Bacon Quiches

2 1/4 c Sifted flour
1 1/2 ts Salt
3/4 c Shortening
5 tb Cold milk
5 Eggs
1 tb Butter or margarine
1 c Diced Canadian bacon
2 c Thinly sliced apples, red delicious, unpeeled
1 tb Flour
1 3/4 c Half and half Cream
1/8 ts Nutmeg
1/4 ts Caraway seeds
1/2 ts Dry mustard
1 c Shredded Swiss cheese

Directions to make Apple-Bacon Quiches

Step 1:Combine sifted flour and 1 teaspoon salt. Cut in shortening until particles are size of peas. Sprinkle with about 5 tablespoons cold milk, adding just enough to make stiff dough. Shape into 6 balls. Roll out on lightly floured board to 6-inch circles and fit into 6 (5-inch) tart pans
Step 2:Fold edges under and build up high fluted rim. Pierce all over with fork tines.
Step 3:Separate 1 egg. Beat egg white lightly and brush over bottoms and sides of shells. Bake below center of oven at 425F 15 minutes.
Step 4:Meanwhile, melt butter and saute bacon 1 minute. Add apple slices, cover and cook about 10 minutes, until apples are almost translucent. beat remaining whole eggs with remaining egg yolk. Add flour, half and half, remaining 1/2 teaspoon salt, nutmeg, caraway seeds and dry mustard and mix well.
Step 5:Sprinkle cheese evenly among tart shells, top with apples and bacon. Pour egg mixture into shells.
Step 6:Bake at 375F about 30 minutes, or until set in center. Cool to lukewarm before cutting.

Step 2:Remove bacon with a slotted spoon, reserving drippings in casserole; set bacon aside. Add vegetables to drippings; microwave at HIGH 6 to 8 minutes or until tender.
Step 3:Blend in lfour, salt, and pepper; stir well. Gradually stir in half-and-half, milk, and chicken broth. Cover and microwave at HIGH 7 to 11 minutes or until thickened and bubbly, stirring at 2 minute intervals.
Step 4:Add cheese, stirring until melted. Cover and microwave at MEDIUM 2 minutes. Top each serving with bacon..
